*Pumpkin Cake Donuts*

"I am so glad I live in a world with Octobers."


Donuts: Sugar Coating:

4 cups flour 1 c sugar

2 1/2 t baking powder 1 1/2 t. ground cinnamon

1 t baking soda 1/2 tsp nutmeg

1 tsp salt

1/2 c. butter, softened

3/4 c. brown sugar

2 eggs

1 cup pumpkin puree

1 t vanilla extract

1/2 c milk

4 c canola oil


In large bowl ( or mixer) combine all wet ingredients. Slowly add the dry ingredients-half at a time. After blended, roll out on a well floured surface. Cut using a 1/1/2 inch round cookie or donut cutter. Add oil to large saucepan and heat oil until it reaches 340 F. Mix sugar coating, place aside. Start frying donuts in small batches; 6 at a time. Cook one and a half minutes per side. Once browned transfer to a cooling rack lined with paper towels. Let set for a minute and then roll into sugar. Repeat process, good for donut holes too, Serve warm!
