Serve this with nacho chips, as a salad or even as a topping on your omelet!
1 cup Kalamata olives, sliced thin
2 pints cherry tomatoes, quartered
1 red pepper sliced thin
2 cloves garlic, minced
6 ounces Feta cheese crumbled
1/2 cup fresh basil, chopped
3 Tbsp lemon juice
3 Tbsp extra virgin olive oil
2 tsp balsamic vinegar
salt and pepper
Combine all fresh ingredients, coating with the olive oil, lemon juice, vinegar, garlic and salt and pepper.
