Eggs are Good!

Hard boiled eggs are truly one of the smartest and fastest go to snacks. Packed with healthy fats and plenty of protein, they are a nutrition no brainer.

 

One large egg contains 70 calories, 7 grams of protein, rich sources of vitamin A, vitamin D, B6, B12, minerals zinc and iron,  zero carbs and sugar.

 

In addition to the popular boiling method, steaming eggs is also an eggsellent choice! ( I couldn't resist)

 

Fill a medium pot with salt water and add a steamer rack, add eggs and cover. Boil water for 13 minutes.

They are best stored in the fridge unpeeled for up to a week, unpeeled for two days.

 

Some interesting alternative ways to eat eggs:

 

Egg topping for roasted veggies: stir together chopped hardboiled eggs, 2 tbsp olive oil, parsley and 1 tsp white vinegar ( grainy mustard optional)

 

Mix with smashed avocado on wheat toast or crackers

 

Deviled eggs using greek yogurt instead of mayo, salt and pepper and lemon juice.

 

Breakfast Egg Muffins-These are an easy grab and go packed with protein!

6 eggs                                               

1/2 c. cooked chopped spinach

1/3 c. crumbled bacon

1/3 c. cheddar cheese

Whisk all ingredients: pour into muffin cups, Bake at 375 for 15-18 minutes.

Top with diced tomato and parsley
