January Chill Chicken Soup


It is cold out, and you need to make this hot soup today!

It will be just what you are craving on these short, dark January days!

Ingredients:

1 tbsp butter

1 tbsp olive oil

2 cloves garlic, minced

1 sweet onion, diced

1 cup chopped carrots

1 cup mushrooms, sliced

1/2 cup celery, sliced

1 bok choy, chopped

4 scallion green onions, sliced thin

6 cups chicken stock

2 boneless chicken breasts, cooked and shredded

2 cups egg noodles

salt and pepper

Topping:

soy sauce/sesame oil

chopped cilantro

lime wedges

Heat oil and butter in big pot over medium heat. Add garlic, onions, carrots, celery, mushrooms, salt and pepper. Heat about 3-4 minutes. Add chicken stock, and bring to boil.

Reduce to simmer, for 15 minutes. Add book chop and chicken, simmer another 15 minutes. Throw in scallions, and add toppings if so desired.
