Zucchini Oatmeal Chocolate Bars


Got Zucchini? Yeah, me too. Lots and lots! Here is a fun recipe that your kiddos will love, and they don't even need to know that it is healthy!

Ingredients:

1 c. flour (whole wheat or mix 1/2 cup with all purpose)

1 1/2 c. rolled oats

1/3 c. brown sugar

1/2 tsp baking powder

1 large egg

1 large banana, mashed

1/2 c. applesauce

1/4 c. almond milk

3 T. coconut oil, melted

1 large zucchini, shredded

1/4 c. dark chocolate chips

Preheat oven to 350 degrees. Grease 9 x 9 pan with coconut oil.

Combine flour, oats baking powder and brown sugar. In a separate bowl mix egg, banana, applesauce, almond milk, and coconut oil.

Add dry with wet ingredients. Stir in Zucchini and chocolate. Bake for 25 minutes.
