Pumpkin Whoopie Pies!

Anyone who knows me, knows with absolute certainty that I love Fall. The scents of apple, pumpkin, the colors of red, yellow and gold, and the fabulous comfort foods. Chili, Beef Stew, Apple Crisp and yes these Delish Pumpkin Whoopie Pies! Try them out and see for yourself!


3 c. flour

1 1/4 Tbsp pumpkin pie spice

1/2 tsp nutmeg

1/2 cinnamon

1 tsp kosher salt

1 tsp baking powder

1 tsp baking soda

2 c. brown sugar

1/2 c. vegetable oil

1 c. softened butter, divided

1 15 oz. can pumpkin puree

2 eggs

3 tsp pure vanilla extract, divided

8 oz cream cheese softened

3 c powdered sugar

2 Tbsp maple syrup

Preheat oven to 350 degrees. Mix flour, spices, baking powder, salt and baking soda.

In separate large bowl beat brown sugar, vegetable oil, 1/2 c butter, pumpkin puree, eggs and 1 tsp vanilla until smooth.

Add dry ingredients.

Scoop dough unto cookie sheet, bake 13-15 minutes. Cool completely.

For the frosting: Beat 1/2 c butter, cream cheese, powdered sugar, 2 tsp vanilla, and maple syrup until fluffy.

Spread frosting in the middle of two cookies. Enjoy!
